Act as a point person for press operations and have an elevated proficiency in all systems pertinent to the pasta making process including but not limited to debugging problems and issues, completing accurate and reliable inventories, appropriately adjusting pasta schedule, and identifying and resolving process trends before they impact line or plant performance. Also, set up, operate, and control all equipment systems that are required to produce good pasta. This includes ingredient blending, flour transfers, process water temperature control, vacuum and boiler systems gauge readings, dryer temperature and humidity controls and delivery of the pasta to the designated destination.

  • Demonstrate consistently solid performance of all duties including understanding compressed air systems, boiler systems, flour system, vacuum system, process and die wash systems, WIP system, line startup, changeover, shift change, and shutdown procedures
  • Lead efforts to trouble shoot any pasta producing issues through to resolution including paperwork, SAP, and quality issues.
  • Proactively detect and resolve issues before they become problematic from a financial, delivery, or quality standpoint.
  • Effectively and efficiently coordinate startup, shift handoff, and shutdowns to insure optimal pasta producing results in regards to financial, delivery, and quality metrics.
  • Partner with maintenance and plant leadership to coordinate and complete equipment inspections and maintenance of all equipment pertaining to the pasta process to ensure optimal performance.
  • Proactively evaluate product, paperwork and equipment conditions to ensure issues are detected before they become problems resulting in financial, delivery, or quality issues.
  • Work with maintenance to complete equipment inspections and PM’s as trained.
  • Coordinate PM activities with maintenance to coincide with production activities on the shift.
  • Control of the equipment within parameters requiring a minimum hourly check of all major indices, including gauges, readings from graphs, computer information, all with the aim of reacting to the data in a correct direction.
  • Reviewing and understanding the production schedule and pasta making needs for packaging lines.  Pasta availability and good quality required for this area. Set up, operate, and control all equipment that produces good pasta.
  • Review, record and move, as appropriate, pasta to required packaging line or storage locations including bagging pasta in super-sacks when needed ensuring proper location tracking of product. Unloading of super sacks to supply packaging lines. Record production data from lines and ancillary equipment systems hourly.
  • Recording of hourly data on the pasta production record sheets and the downtime logs.
  • React to the data to control the processes.
  • Testing of pasta exit moisture samples for moisture content as per specification requirements. Uploading data to Zontec. Adjusting of set-point parameters as necessary to achieve correct production standards and ensuring that good pasta is produced. Inspect pasta to evaluate quality by review of shape, size and color. Take corrective action as required.
  • Provide information on pasta location, type and quantity to Managers, Supervisors, Co-workers.
  • Changing of dies to produce different shapes, importing production recipes, monitoring and correcting the process, washing and storing of dies, die rings and filters. Maintain press area, platforms, die room and flour tailings area to a food grade standard.
  • Other duties as assigned.

    EDUCATION and/or EXPERIENCE: High school diploma or equivalent. A minimum of 2 years related work experience required. Experience and knowledge in food sanitation operations, procedures, chemicals and program standards, preferably in a general food or manufacturing industry.

    LANGUAGE SKILLS: Ability to read in English and comprehend simple instructions, short correspondence and memos. Ability to write simple correspondence. Ability to effectively communicate with employees.

    MATHEMATICAL SKILLS: Ability to add, subtract, multiply, and divide numbers, including decimals and fractions. Simple use of charts, tables, drawings, specifications, schedules, adjustable measuring instruments. Check reports, where interpretation requires basic skills knowledge.

    REASONING ABILITY: Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.

    CERTIFICATES, LICENSES, REGISTRATIONS: GMP and safety certification, Forklift Certified including aerial / scissor lift certifications required or need to be certified up on hiring in order to operate safely.
